Mario is an Italian born chef whose passion is to connect his modern cuisine using authentic Italian ingredients combined with Italian tradition. He credits his mother, Maria with introducing him to traditional cuisine of Rome and Tuscany. Mario's childhood is filled with delicious memories of his mother's cooking with simple natural farmed ingredients transformed to extraordinary dishes. Mario grew up both in Rome and Cortona (Tuscany) made famous by his neighbour and author Frances Mayes who wrote the famous book "Under the Tuscan Sun". 

Mario's restaurant Fiorenzoni has received                                                                                               numerous awards from the coveted Quality Italian                                                                               Seal Award 2013 and the SMH Good Food                                                                                         Guide 2004-2012.

Gastronomia Italiana - A Chef Secrets

Anita is a multi-faceted chef with a wide range of experience in a variety of cuisines. She is a Certified Chef with a Degree in Bachelor of Education majoring in VET (Vocational Education and Training). Anita works casually as a Chef/Lecturer with TAFE and with Le Cordon Bleu Culinary Institute since 2007.

She was also a Certified Culinary Judge and member of ACF (Australian Culinary Federation) and WACS (World Association of Chefs Societies) for 10 years. Anita is also an avid traveller who has lived in 3 continents and backpacked all across the globe. She is an advocate of using only natural ingredients from farm to table, having experienced farm life in the Philippines and Italy. Anita loves to make exquisite home-made foods that not only taste and looks good but is seriously good for you.
